Food

I went to the doctor on Friday and found out that I am having an allergic reaction to wheat, cheese, rice, and sugar. I also have a bacteria going on and lack some minerals in my body. So she wants me to go off basically all food except chicken, soy, fish, and non-starchy veggies. As you can imagine this is quite overwhelming. I love sugar (specifically in chocolate) so this is going to be a challenge! What I wanted to know is what I could eat for breakfast. She told me vegetables. Veggies for breakfast? We had salad for breakfast in Japan (though I couldn't make myself eat it) so I know it's doable, but it's really changing my view of how I view food. Today was my first day of trying this out and it went really well. I feel very blessed that I did not want, crave or even think about chocolate today (which is rare for me!)
They want me to do this for at least three months and then we will see how things go and may be able to introduce some foods back into my diet.
What I hope is that I will drop weight! I am going to St. Thomas and St. John (in the US Virgin Islands in the Caribbean) in December and I would really really really like to be about 10 or more pounds lighter. (For those of you who thought I didn't need to lose weight I have gained six-seven pounds over the past two months--probably from stress.) If I have to give up all these foods I love I feel like I should get some benefit. :)

If anyone has some good recipes for veggies let me know. I'm going to be super healthy! :)

Could you do a vegetable omlet for breakfast?
